Paneer Sesame Fingers with a Twist






This month my challenge was with Sathya Priya Karthik. She gave me Paneer and sesame seeds. I would like to try different. Thank you Sathya.

Ingredients
Paneer - 10 pieces
(Finger shape and 1 inch wide)
Cornflour - 4 tbsp
Maida - 2 tbsp
Sesame seeds - 1/4 cup
Salt to taste
Oil to deep fry

Stuffing to fill the paneer
Green chillies - 2
Ginger - small piece



Method

Stuffing to fill the paneer
  1. In a mixi jar add chillies and ginger and make a paste.


For sesame paneer
  1. In a bowl add cornflour, flour, salt and water to make a smooth batter.
  2. Take a piece of paneer and give 1/2 inch vertical slit and 1/4 deep slit in the middle and fill with stuffing.
  3. Dip the paneer pieces in the batter and roll in the sesame seeds and deep fry in hot oil till they are golden brown.
  4. Remove from the oil and drain on absorbent paper.
  5. Serve with tomato sauce.

Tamalapaku bajji / Betel leaves fritters stuffed with potato masala





Ingredients
Tamalapakulu – 6

For the batter
Besan – 1 cup
Rice flour – 3 tsp
Ajwain – 1 tsp
Turmeric powder – a pinch
Baking soda – a pinch
Salt to taste

For the stuff
Boiled & mashed potato – 1
Grated carrot – 1
Boiled & mashed green peas – ¼ cup
Red chilli powder – ½ tsp
Chopped coriander leaves – 2 tsp
Curry leaves – 4 leaves
Cumin seeds - ¼ tsp
Lime juice – 2 tsp
Oil – 1 tsp
Salt to taste

Preparation


For the batter
  1. In a bowl add all ingredients. Adding water, prepare medium thick batter.

For the stuff
  1. In a pan add oil. Add cumin seeds, curry leaves. Allow them to splutter. 
  2. Add mashed potato, carrot, peas, chilli powder, garam masala, salt, coriander leaves and mix for 5 mins. 
  3. Now add lime juice and mix well. Allow them to cool.                          

Method

  1. Wash and dry the wet on betel leaves. 
  2. Heat oil on medium high. Place the leaves upside down spread the potato mixture  on top and roll it. Close the sides. 
  3. Dip the stuffed leaves in batter and gently drop from the sides of kadai into hot oil and deep fry until golden. Remove from the oil. Place it on a paper towel. Serve.

Banana stuffed with ice cream




Ingredients
Banana
Ice cream any flavor
(I used vanilla flavor)
Melted dark chocolate

Method
  1. Cut banana into 2 inches size. Scoop out the flesh using small spoon upto inch depth.
  2. Keep it in freezer upto 1 hour. Remove it.  
  3. Fill it with ice cream and again keep it in freezer for 1 hour. Remove it.
  4. Pour melted chocolate on top of ice cream and keep it in freezer for ½ hour.
  5. Serve immediately.

Khatta Meetha veg (Indo – Chinese Style)





Ingredients
Bell pepper / Capsicum – 1
(Cut into cubes)
Onion – 1
(Cut into cubes)
Meal maker – 1 cup
Garlic pieces – 2 pods
Soya sauce – 1 tsp
Tomato sauce – 1 tsp
Chilli sauce – 1 tsp
Lime juice – ½ tsp
Pepper powder – 1 tsp
Salt to taste

Method
Boil water in a bowl, add salt and meal maker and allow them to boil for 2 mins.
Squeeze the entire water from meal maker. Keep it aside.
Melt butter in a pan, add garlic and fry for a while.
Add meal maker and fry for 4 mins.
Add capsicum, onion cubes to the same pan and fry for 5 mins until or half cook.
Add lime juice and mix for a while.
Add salt, pepper powder and mix for 2 mins.
Add all sauces and mix for 2 mins and serve.

Punugulu/Urad Dal Bonda





Ingredients
Rice and urad dal – 1:3
(Soak for 2 hours. We need 1 cup)
Finely chopped onion – ½ cup
Red chilli powder – 2 tsp
Turmeric powder – ½ tsp
Coriander powder – 1 tsp
Garam masala – ½ tsp
Baking soda – ¼ tsp
Salt to taste
Oil to fry

Method
  1. In mixi jar, add all ingredients except onion and oil. Grind it.
  2. Make smooth batter using small amount of water.
  3. Transfer it to a bowl, add onions, salt, baking soda and mix well.
  4. Heat oil in a pan, drop like Punugulu and fry till it becomes crispy.

Vegetable Rolls



Ingredients
For Stuffing
Boiled green peas – 1 cup
Sprouted moong dal - 1 cup
Grated carrot – ½ cup
Boiled sweet corn mashed – ½ cup
Jeera – 1 tsp
Garam masala – ¼ tsp
Chole masala – ½ tsp
Green chilli paste – 1
Pepper powder – 1 Tsp
Lemon juice – ½ piece
Salt to taste
Oil – 2 tsp
Oil to fry

For Dough
All purpose flour – 1 cup
Salt to taste

Method

For Dough
                        In a bowl mix flour and salt. Make a dough using water. Keep it aside for 30 mins.

For Stuffing
                        Heat oil in a pan, add jeera aloe to temper. Add vegetables, green chili paste and mix well. Let fry for 3 mins. Add moong dal, pepper powder, garam masala, chole masala, salt and mix well for 2 -3 mins. Add lime juice and mix it. Allow this mixture to cool.

                       
For Rolls

                   Divide the dough into lemon size balls. Roll it as puri. Place the stuffing (1 -2 tsp).Fold the sides first and roll it. Apply little water to the edges and roll it. Add 4 to 5 Tsp oil in a pan and shallow fry it. Vegetable Manchurian




Ingredients
Finely chopped cabbage – 1 cup
Finely chopped carrot – ¾ cup
Finely chopped onion – ¾ cup
Finely chopped beans – ¾ cup
Finely chopped capsicum – ½ cup
Finely chopped green chillies – 3
Maida - 3 tsp
Corn flour - 1 tsp
Ginger, garlic paste – 1 tsp
Salt and pepper powder to taste
Oil to fry
Coriander leaves for garnishing

For the sauce
Chopped garlic – 2 tsp
Green chilli – 3
(Cut chillies vertically in between)
Tomato sauce – 2 tsp
Chilli sauce – 2 tsp
Soya sauce – 1 tsp
Vinegar – 1tsp
1 tsp of corn flour mixed with 1 cup water
Salt to taste
Oil – 1 tsp

Method

For the balls
                Ina bowl add all chopped vegetables, maida: cornflour (2: 1), pepper powder and salt. Knead well. Form small balls from the mixture. In case of any trouble, sprinkle a little water to bind the mixture. Deep fry in hot oil till golden brown. Drain on absorbent paper and keep aside.
For the sauce
                    Heat oil in a pan add garlic, green chillies. Stir fry over a high flame for a few seconds. Add fried balls, cornflour paste, soya sauce, chilli sauce, tomato sauce, vinegar and salt. Simmer for a few minutes. Garnish with coriander leaves.

Note: Add maida, cornflour according to vegetables quantity.

Burritos











Ingredients
Tortillas / chapati – 2
Avocados – 1 (peeled, seeded & diced)
Carrot pieces – 1
Capsicum pieces – 1
Onion pieces – ½ piece
Pepper powder – ½ tsp
Salt to taste
Butter – 2 tsp


Method

   ·     Place a tawa on flame. Heat tortilla / chapati on tawa.
         ·     Heat butter in a pan, saute capsicum, onion, carrot for 5 mins.
         ·     When vegetables are soft, sprinkle pepper powder and salt. Cool it.
         ·     Add above mixture to avocado bowl. Mix well.
         ·     Place the mixture down the center of one warmed tortilla.
         ·     Fold in top and bottom of each tortilla.
         ·     Roll up from side. Serve.

Cabbage Pancake




Ingredients
All purpose flour – 1 cup
Corn flour – ½ cup
Finely chopped cabbage – 2 ½ cups
Grated carrot – ¼ cup
Ginger chopped – 1 inch
Green chilli chopped – 2
Salt – ¼ tsp
Oil – 2 tsp
Tomato ketchup optional
Mayonnaise optional

Method

                    In a bowl add flours, salt and mix well. Make dosa batter by adding water. Heat a tawa, apply oil. Add remaining ingredients and mix well. Take big lemon size dough, spread it on tawa using hand. Close it lid. Cook on low medium flame. Cook for both sides. 

Note : Childrens don't like to eat pancake directly. If you spread ketchup on pancake, they will definitely like it.

Pasta Pakodi / Pasta Fritters




      

Ingredients
Boiled penne pasta
Oil to fry

Stuffing
Roasted daliya (Putnalu) – ½ cup
Ajwain – 1 tsp
Tamarind – small ball
(Soak in water)

Preparation
                        In a jar add daliya, ajwain and make it powder. Add tamarind and make it paste.

For the batter
Besan – 1 cup
Rice flour – 2 tsp
Ajwain – 1 tsp
Turmeric powder – a pinch
Red chilli powder – 3 tsp
Baking soda – a pinch
Salt to taste

Preparation
                          In a bowl add all ingredients. Prepare thick batter by adding water. Leave it for 30 mins.


Method

  1. Boil the pasta by adding salt & oil. Strain it. 
  2. In the middle space of each pasta, fill it with stuffing. 
  3. Heat oil on medium flame. Dip the stuffed pasts in batter and gently drop from the sides of pan into hot oil and deep fry until golden. 
  4. Drain on a paper towel. Serve with tomato ketchup.

Onion Rings



Ingredients
Maida – ½ cup
Sweet yellow Onion – 1 large
Pepper powder to sprinkle
Oil to fry
Rusk powder / bread powder
Lemon juice (optional)
Salt to taste

Method
                Cut onion ½ inch thick, remove dark exterior, separate into rings. Mix ½ cup flour and salt. Add water to make a thick mixture of all ingredients. Dip onion rings into mixture and again dip in rusk powder. Deep fry in oil until golden brown. When golden, remove and let drain on paper towels. Sprinkle pepper powder on onion rings. Serve with ketchup.

Cauliflower Manchurian




Ingredients

Cauliflower – 1 cup
Oil to fry

For the batter
Maida - 3 tsp
Corn flour - 1 tsp
Ginger, garlic paste – 1 tsp
Salt and pepper powder to taste

For the sauce

Chopped garlic – 2 tsp
Green chilli – 3
(Cut chillies vertically in between)
Tomato sauce – 2 tsp
Chilli sauce – 2 tsp
Soya sauce – 1 tsp
Vinegar – 1tsp
Salt to taste
Oil – 1 tsp
1 tsp of corn flour mixed with 1 cup water

Method
                   Cut the cauliflower into florets. Soak them in hot salt water for 5 mins.
For the balls

                            Ina bowl add maida: cornflour (2: 1), pepper powder and salt. Sprinkle a little water to bind the mixture. Dip the cauliflower in the batter. Deep fry in hot oil, till golden brown. Drain on absorbent paper and keep aside.
For the sauce

                            Heat oil in a pan add garlic, green chillies. Stir fry over a high flame for a few seconds. Add fried balls, cornflour paste, soya sauce, chilli sauce, tomato sauce, vinegar and salt. Simmer for a few minutes. .

Note: Add maida, cornflour according to vegetables quantity.
