Mixed Vegetable Curry





Ingredients
Potatoes (peel &cubed) – 2
Cauliflower pieces (small) – half flower
Carrot (peel &cubed) – 2
Curd as per requirement
Onions -1
Green chilli – 4
Curry leaves - little
Mustard seeds -1tsp
Jeera – 2tsp
Oil – 3tsp
Salt to taste
Coriander leaves for garnishing

For paste
Dried coconut -4tsp
Poppy seeds (dry roast) – 2tsp        
In a mixi jar add coconut, poppy seeds make it as smooth paste. For making paste use little amount of water.

Method
               Place a bowl on stove top add some water and boil it. To that add a pinch of salt and vegetables bring them to half cooking.  Strain them. In a pan add oil, mustard seeds, jeera, curry leaves, green chilli and let them fry till brown. Add boiled vegetables mix it properly. Keep lid for 3 minutes. Add curd and mix well. Keep lid for 5 min. Add paste to the vegetables and mix it. Keep lid for 5minutes.Garnish with coriander leaves. Serve with chapati/paratha.
