Wheat Flour Ladoo




Ingredients
Wheat flour – 1 cup
Powder sugar – ¾ cup
Milk as per requirement to make ladoos
Ghee – 2 Tsp
Elachi powder – ½ tsp
Chopped dry fruits

Method
                   Heat ghee in a pan, fry the flour until aromatic. Cool it.  Transfer it to a bowl, add remaining ingredients and mix well. Make it as ladoos.

Spring Onion Chutney




Ingredients
Chopped spring onion – 1 bunch
Chopped coriander leaves - 1 cup
Chopped green chilli - 4
Ginger – 1 piece
Tamarind pulp – 1 tsp
Salt to taste

For Tempering
Mustard seeds - 1 tsp
Chana dal – 1 tsp
Urad dal – 1 tsp
Oil – 1 tsp

Method
                      In a mixi jar add spring onion, coriander leaves, green chilli, ginger, tamarind pulp, salt and blend it till it forms a smooth paste. In a pan add oil and temper it. Add this tampering to the bowl. Garnish with coriander leaves.

Pasta Pakodi / Pasta Fritters




      

Ingredients
Boiled penne pasta
Oil to fry

Stuffing
Roasted daliya (Putnalu) – ½ cup
Ajwain – 1 tsp
Tamarind – small ball
(Soak in water)

Preparation
                        In a jar add daliya, ajwain and make it powder. Add tamarind and make it paste.

For the batter
Besan – 1 cup
Rice flour – 2 tsp
Ajwain – 1 tsp
Turmeric powder – a pinch
Red chilli powder – 3 tsp
Baking soda – a pinch
Salt to taste

Preparation
                          In a bowl add all ingredients. Prepare thick batter by adding water. Leave it for 30 mins.


Method

  1. Boil the pasta by adding salt & oil. Strain it. 
  2. In the middle space of each pasta, fill it with stuffing. 
  3. Heat oil on medium flame. Dip the stuffed pasts in batter and gently drop from the sides of pan into hot oil and deep fry until golden. 
  4. Drain on a paper towel. Serve with tomato ketchup.

Oats Cucumber savory




Ingredients
Oats – 2 cups
Chopped mushrooms – 1 cup
Chopped carrot – ½ cup
Cucumber slices – 1
Onion cubes – 1 medium
Olive oil – 1 tsp
Pepper to taste
Italian seasoning (or) oregano – 1 Tsp
Salt to taste
Water – 2 cups

Method

                    Heat oil in a pan, add mushrooms, cook until oil absorbed by mushrooms. Add onion, carrot, salt and allow them to soften. Add cucumber slices and cook for 2 mins. Once the vegetables are soft, add oats, herbs, pepper powder and stir for a while. Pour water and mix it. Leave this to soften.

Onion Rings



Ingredients
Maida – ½ cup
Sweet yellow Onion – 1 large
Pepper powder to sprinkle
Oil to fry
Rusk powder / bread powder
Lemon juice (optional)
Salt to taste

Method
                Cut onion ½ inch thick, remove dark exterior, separate into rings. Mix ½ cup flour and salt. Add water to make a thick mixture of all ingredients. Dip onion rings into mixture and again dip in rusk powder. Deep fry in oil until golden brown. When golden, remove and let drain on paper towels. Sprinkle pepper powder on onion rings. Serve with ketchup.

Ridge Gourd Chutney /Beerakaya Pachadi





Ingredients
Beerakaya pieces – 1 cup
Chopped onion – 1
Pandu mirchi / red chilli – 7
Garlic – 4
Chopped coriander leaves
Salt to taste
Oil – 2 tsp
Tamarind - small ball
(Soaked in water)

For powder
Methi seeds roasted – 1 tsp
Coriander seeds roasted – 2 tsp
Peanuts roasted – 5 Tsp

For tempering
Mustard seeds – 1 tsp
Jeera – 1 tsp
Curry leaves – 1 string
Hing a pinch

Method

                Heat oil in a pan, beerakaya pieces, onion, mirchi and cover it. Cook for 10 mins. Cool it. In a mixi jar, add above mixture, garlic, tamarind, powders, coriander leaves, and salt. Grind it. Add temper to it.

Kiwi Banana Smoothie




Ingredients
Kiwi – 1
Banana – 1
Orange juice – 1 cup
Honey – 3 Tsp
Curd – ¼ cup

Method
                      In a blender add all ingredients and blend it well. Add ice cubes and serve.

Egg Soft Pasta





Ingredients
Boiled pasta – 2 cups
Eggs – 2
Chopped vegetables – 1 cup
(Cabbage, carrot, capsicum)
Chopped onion – 1 medium
Green chillies – 4
Ginger, garlic pieces – 2 tsp
Pepper powder – 1 tsp
Garammasala – ½ tsp
Tomato sauce – 1 tsp
Chilli sauce – 1 tsp
Cumin seeds – 1tsp
Salt to taste
Oil – 2 tsp

Method

                    Boil the water in a bowl add salt and chopped vegetables. Leaves it for 2 mins and strain it. Boil the paste according to directions given on pocket. Heat oil in a pan add cumin seeds wait for 10 sec. Add ginger, garlic pieces and mix well.  Add onion pieces, green chillies and mix it for 5 mins. Add egg mixture and salt. Mix well. Cook for 5 mins. Add cabbage, carrot, capsicum and cook for 5 mins.  Add pasta, garam masala, pepper powder, all sauces, and salt. Mix well. Cook for 10 mins on medium flame.

Greek Fruit Salad




Ingredients
Coconut milk – ½ cup
Chopped fruits – 1 cup
(I used apple, grapes, and banana)
Almonds – 10
(Soaked in water for 1 hr and peel it)
Honey - 2 tsp

Method
                    Heat honey in a pan, pour coconut milk and let it boil. Add fruits, Chopped almonds and cook for 2 mins. Cool it and serve.

Nippattu / Rice Flour crackers / Festival Special



Ingredients
Rice flour – 2 cups
Water – ½  cup
Onion paste (small) – ½ piece
Garlic paste - 3 pods
Peanuts powder – ¼ cup
(Roasted & coarsely powdered)
Curry leaves – 3 strings
Red chilli powder (or) green chilli to taste
Chana dal – 1 ½ tsp (soak in water for an hour and drain)
Oil to fry
Salt to taste
  
Method
                Boi1½ cup of water in a pan. Add salt, Red chilli powder, onion paste, peanuts powder, chana dal, curry leaves and garlic paste. Boil for few minutes and add oil to it. Add rice flour. Mix well and cover the pan with a lid. Switch off the flame and let it cool. Mix and knead well. Make smooth dough without any lumps. Apply oil to your fingers. Take a small sized ball of the dough, place on oiled plastic sheet (or) banana leaf and   using your fingers shape into small puri. Once the oil is hot, deep fry in oil under medium heat till golden brown.

Cauliflower Manchurian




Ingredients

Cauliflower – 1 cup
Oil to fry

For the batter
Maida - 3 tsp
Corn flour - 1 tsp
Ginger, garlic paste – 1 tsp
Salt and pepper powder to taste

For the sauce

Chopped garlic – 2 tsp
Green chilli – 3
(Cut chillies vertically in between)
Tomato sauce – 2 tsp
Chilli sauce – 2 tsp
Soya sauce – 1 tsp
Vinegar – 1tsp
Salt to taste
Oil – 1 tsp
1 tsp of corn flour mixed with 1 cup water

Method
                   Cut the cauliflower into florets. Soak them in hot salt water for 5 mins.
For the balls

                            Ina bowl add maida: cornflour (2: 1), pepper powder and salt. Sprinkle a little water to bind the mixture. Dip the cauliflower in the batter. Deep fry in hot oil, till golden brown. Drain on absorbent paper and keep aside.
For the sauce

                            Heat oil in a pan add garlic, green chillies. Stir fry over a high flame for a few seconds. Add fried balls, cornflour paste, soya sauce, chilli sauce, tomato sauce, vinegar and salt. Simmer for a few minutes. .

Note: Add maida, cornflour according to vegetables quantity.

Soya Potato patties




Ingredients

Burger buns - 4
For patties
Soya Granules (boiled) – ½ cup
Boiled & mashed potatoes – 2
Boiled & mashed rajma – ½ cup
Sprouted Moong dal – ½ cup
Green chillies / red chilli powder – 3 / 2 tsp
Finely chopped onion – 2 Tsp
Bread powder – ½ cup
Salt to taste
Oil - 2 tsp

For layers
Tomato slices – 4
Cucumber slices – 4
Capsicum slices – 2
Lettuce – 1

Method

                    In a bowl add soya, potatoes, rajma, sprouts, green chillies, onion, bread powder and salt. Mix well. Make it as patties. Heat a pan, apply oil, place the patties and cook on both sides. On bun, arrange the layers of lettuce, cucumber, tomato, patty, Capsicum, cucumber, tomato. Place another bun and serve.

Oats Honey Cookies



         

Ingredients
Oats rough powder – 1 ½ cup
APF – ½ cup
Apple grated – ½ piece
Milk – 30ml
Honey – 30 ml
Butter – 1 Tsp
Sugar – 40 gm
Oregano – 1 ½ Tsp

Method

                  In a bowl, add milk and honey. Whisk well. In another bowl, add oats, flour, butter, oregano, sugar and mix well. To this add grated apple and mix well. Add little by little honey milk and make dough. Roll it like chapathi. Using cookie cutter cut it. Place the parchment paper on a plate.  Place the cookies and bake at 3500C for 15 – 20 mins. Cool it.

Cauliflower Soya Curry




Ingredients
Cauliflower florets – 2 cups
Small soya chunks – 1 ½ cup
Ginger garlic paste – 1 tsp
Green chilli chopped – 3
Chopped onion – ½ cup
Tomatoes chopped – 1 cup
Turmeric powder – ½ tsp
Salt to taste

For Tempering
Mustard seeds – ½ tsp
Jeera – 1 tsp
Hing a pinch
Oil - 2 tsp

Method

                   Heat oil in a pan and temper it. Add onion, green chillies, turmeric powder and sort out for 5 mins. Add Paste and mix for 2 mins. Add florets and cook for 7 mins. Add cooked soya chunks, tomato pieces, salt and cook for 5 mins. Add little water and cook for 2 mins. Add coriander powder , coconut powder and cook for 5 mins. Serve with rice/roti.

Mango Dal / Mamidikaya Pappu





Ingredients
Red lentils / Erra kandipappu – 1 cup
Moong dal / pesara pappu – 1 cup
Mango pieces – 1
Chopped onion – ½ piece
Green chillies – 6
Salt to taste

For Tempering
Chopped onion – 3 Tsp
Chopped garlic – 4
Curry leaves – 1 string
Coriander leaves – 2 Tsp
Turmeric powder – ½ tsp
Mustard seeds – 1 tsp
Jeera – 1 tsp
Oil – 2 tsp

Method

                  In a pressure cooker add dals, mango, onion, green chillies, water (3 cups) and cover it with lid. When seaming coming out put the whistle. Keep it for 3 whistles. After steam comes out, mash the dal with salt. Heat oil in a pan and temper it. Add this tempering to the dal. Serve.

Potato Tofu Curry





Ingredients
Potato cubes – 2
Tofu – 250 gm
Chopped tomatoes - 1
Chopped onion – ½ cup
Chopped green chilli – 3
Coriander powder – 1 tsp
Vangibath masala – 1 tsp
Garlic pieces – 4 pods
Salt to taste

For tempering
Mustard seeds – ½ tsp
Jeera – 1 tsp
Turmeric powder – ½ tsp

Method
                 In a pan add oil and temper it. Add garlic, onion, green chillies and mix well.  Leave it for 3 mins. Add potatoes and mix well. Close it with lid and cook for 5 mins. Add tofu and tomatoes, salt and add little water. Close it with lid and cook for 10 - 15 mins. Add vangibath masala, coriander powder and Mix well for 3 mins. Serve with roti.
