Eggless Vanilla Cup Cakes
Ingredients
All purpose flour – 1 ½ cups
Sugar powder – 1 cup
Butter - ¾ cup (at room temperature)
Thick curd – 1 cup
Vegetable oil – 80 ml
Vanilla extract – 1 tsp
Baking soda – 1 Tsp
Baking powder – 1 tsp
Method
Preheat the oven to 3500C. In a
bowl add yogurt and beat well. Add butter and mix well. Add oil, vanilla
essence and blend well. Sieve the flour twice. In flour, add baking powder,
baking soda and mix well. Add sugar powder, maida little by little to the mixture.
Beat well until the mixture is creamy and thick. Place the baking cups in a muffin pan, fill
each cup with ¾ full. Bake for about 20 mins or until a toothpick inserted
in the center.
